From the Hearth - Traditional Rice Pudding

We all have one or two favorite dishes that with one smell effortlessly transport us back to childhood and fill us with all those wonderful feelings of safety and comfort. For me, Rice Pudding made the old fashioned way is one of those dishes. In the winter my mother would often make this for a weekend desert. According to my siblings and I, she didn't make it often enough!

I encourage you to give this recipe a try, it is as far in taste from the small plastic cups of manufactured stuff as you can get. It takes only a few minutes to put together and then you just pop it in the oven and forget about it for a couple of hours. The raisins are strictly optional if you don't care for them, I personally love the little pops of flavor amongst the rice..

Ingredients

  • 2 eggs, beaten
  • 4 cups milk
  • 1/2 cup white sugar
  • 1/2 cup uncooked white rice
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins (optional)
  • 1/8 teaspoon ground nutmeg

Directions

Preheat oven to 300 degrees F (150 degrees C). Grease a 2 quart baking dish.

Beat together the eggs and milk. Stir in white sugar, uncooked rice, butter, vanilla extract, raisins, and nutmeg. Pour into prepared pan.

Bake for 2 to 2 1/2 hours in the preheated oven. Stir frequently during the first hour.

The magical properties of this dish will vary just slightly depending on what type of milk you use. But over all, this is a warming and filling desert that brings in both comforting mother energy and powerful prosperity magic. Something that was definitely a focus in the long cold winter for our Ancestors.
