Magickal Meals: Home Made Pasta Sauce

Many years ago I was gifted a hand written cook book by an older Kitchen Witch. This has become my prize possession and has followed me in all my moves and travels, usually carefully packed right where I can see it!

This spaghetti sauce recipe is a firm favorite and seems to be loved by everyone who eats it. While it seems complex at first glance, it does all its cooking in a crock pot so you can put it together then simply walk away.

Eat it right away or bottle it for a later date.

Spaghetti Sauce

Ingredients

• 2 Bay Leaves
• 2 T. Olive Oil
• 6 Cloves Garlic – Pressed or minced
• 1 Medium Green Pepper – chopped
• 1 large Onion – chopped
• 1 T. Dried Oregano
• 1 t. Dried Basil
• ½ lb lean pork, trimmed & Cubed
• Salt & Pepper
• 28oz can Italian tomatoes with juice
• 12 oz can tomato paste
• 15 oz can tomato sauce
• 1 lb sweet Italian sausages
• 1 lb hot Italian sausages
• ¼ c. Parmesan Cheese
• ¼ lb Provolone – Grated

Directions

1. Heat oil in pot on high; add pork cubes and garlic. Cook for 20 minutes; stir to turn pork.
2. Add seasonings, onion, and peppers. Cook 10 minutes; stir to blend.
3. Adjust seasonings and add salt and pepper to taste.
4. Add to the above ingredients, Italian Tomatoes in Juice, Tomato Paste, Tomato Sauce. Stir after each addition to break up the tomatoes and blend.
5. Pierce sausages with a fork and place along edge of pot lengthwise with sausages touching side of pot.
6. Cook one hour on high; stir.
7. Cook 3 hours low; stirring to blend.
8. Add cheese; simmer to blend.

I like to leave it alone to cook on low for another 6-8 hours. Stirring it whenever I remember.
