As Ostara rolls around again many of us are in the firm grip of spring fever. If you are anything like me you are constantly looking out the window waiting for it to be fine enough, warm enough to start tidying that yard! to get your hands back in the dirt and reconnect with Gaia.
That longing to connect and bring forth life is the essence of what Ostara is all about. It is a fertility festival because it is all about the triumph of life over the deep cold of winter. So, any recipe for Ostara has got to be all about eggs, right?
This one is a favorite of my husband and is greeted with cheers every time i make it. All my friends (except one) have gleefully inhaled these when presented with them. They are a huge favorite in the UK and related parts of the world, but not as well known in the US.
I did some research (because i do) and there are several different origin stories to the egg. They agree that its true name is actually a Scotched Egg, Some say that scotching refers to the finely minced meat wrapping, others say it comes from "scorched" because they were originally cooked over an open flame.
I say it doesn't matter, bring on the eggs!
Ingredients
12 Eggs - Hard Boiled
2lb Pork Sausage
2 TBS Parsley
2 TBS Onion Powder
1-2 tsp Minced Garlic
2 tsp Black Pepper
Salt - to taste
1-2 tsp Dried Thyme
1 Cup Flour
4 Eggs - Lightly Beaten
2 Cups Breadcrumbs
(for a low carb version, swap out the flour and breadcrumbs for finely crushed Pork Rine)
Directions
- Preheat oven to 350F
- Add galic, thyme, onion, pepper and salt to sausage and mix thoroughly.
- Divide into 12 equal portions and wrap sausage meat around each peeled, hard boiled egg.
- Roll eggs in flour, shaking off excess then dip in beaten egg the breadcrumbs.
- Bake for 25-30 mins.
- Heat oil to 350F. Fry each egg until golden brown, turning when needed.
Serve hot or cold.
